Avocado Pineapple Smoothie
- 1 avocado, pitted, peeled, and cut into chunks
- 1 cup very cold pineapple juice
- 1 cup very cold low-fat coconut milk
- juice of 1 lime
- 2 lime wedges, for garnish
Directions:
In blender, combine avocado with pineapple juice; blend on Low 15 seconds. Add coconut milk and lime juice; blend on High until smooth. Pour into glasses; garnish with lime. Serves 2.
Per serving: 480 calories, 5g protein, 31g carbohydrate, 42g fat (27 g saturated), 0 mg cholesterol, 33 mg sodium, 10 g fiber.
