Polynesian Punch

Ingredients:
  • 1 cup coconut milk
  • 1 cup apricot nectar
  • 1 cup raspberry sorbet
  • 3 cups hulled and quartered strawberries, frozen
  • 1 cup canned pineapple chunks,frozen
  • 4 lemon slices
Directions:
In blender, combine coconut milk, apricot nectar, and sorbet; blend 20 seconds on Low. Add the fruit, and blend on Medium until smooth. Pour into glasses, and garnish with lemon slice. Serves 4.
Per serving: 302 calories, 3g protein, 46g carbohydrates, 15g fat (13 g saturated), 0 mg cholesterol, 13 mg sodium, 6 g fiber.
